Brilliant pale golden yellow with golden reflections. Fine, elegant and persistent perlage, creating a soft, creamy mousse.
Bouquet
Complex and elegant bouquet with notes of white flowers, citrus (lemon, grapefruit), mineral hints, and toast. Evolves towards honey, almond, and brioche.
Taste
Fresh, vibrant, and balanced, with a fine structure and integrated acidity. Notes of citrus, white fruit, and persistent minerality. Long finish.

Flute or, preferably, a tulip-shaped Champagne glass, wider to enhance the complexity of the aromas and the perlage.
Pairings
Excellent as an aperitif. Pairs with seafood, shellfish, oysters, noble fish, caviar, and fresh or delicately aged cheeses.
Refinement
At least 10-12 years on lees, imparting great complexity and aromatic depth. The 2004 vintage rested 11 years on its lees.
Vinification
Hand-harvested Grand Cru grapes, gentle pressing. Fermentation in stainless steel tanks. Second fermentation in bottle (Champenoise Method).
