Manufacturer: Luigi Baudana
Langhe Doc Bianco Dragon
GRAPE VARIETY
80% Chardonnay, 20% Sauvignon, Riesling and Nascetta
DESCRIPTION
Luigi planted Chardonnay and a touch of Sauvignon in the early 80s, at the peak of the Langhe Chard-boom. Admittedly, it is not easy to farm Chard and Sauvignon on land which has produced the most structured Barolos since ancient times. However, the Vaira family wanted to carry on Luigi’s tradition and were excited to work with more mature vines with lower yields and beautiful fruit.
To give the wine more depth and elegance, the kids decided to steal a little bit of their father’s beloved Riesling as well as add the local grape variety Nascetta.
The label is a generous gift from Gianni Gallo, which is a hymn to the untamed power and strength of the wines from Serralunga d’Alba … and life itself.
VINEYARDS
The Chardonnay and Sauvignon Blanc vineyards are located on the north-east shoulder of Cerretta Piani at mid-slope.
A fold of this slope makes the plot cooler and more suitable for white grapes. Below the thin topsoil, lies one of the oldest conglomerates of all Piemonte: 14 million year old Helvation soil.
FARMING
Vajra has always believed in sustainable farming and keeps the turf natural and green in the vineyard. Traditional pruning is practiced as well as using the Guyot mixed system of trellising. Every phase of winemaking, starting in the vineyard, is done by hand. No irrigation is used while green harvest is decided according to the vintage.
HARVEST AND WINEMAKING
Manual harvest usually takes place during the first 15 days of September.
A soft-crushing is followed by 15-20 days of fermentation at a temperature of less than 16°C. Ageing is done in stainless steel until bottling the following spring.
TASTING NOTES
Dry perfumes of stone, flowers, and summery grass with a slightly savory taste on the palate. This is the promise of a
Serralunga white. The touches of Riesling and Nascetta add to an extra hint of elegance, giving it a long refreshing finish.
