DESCRIPTION OF THE SOMMELIER
Prosecco Superiore "Doro Nature" represents a very interesting innovation of Valdobbiadene: a Prosecco produced without the addition of sugar dosage. The long stay on the yeasts before the second fermentation with the Charmat method also gives the wine substance and structure but above all the characteristic hints of bread crust.
This vintage Prosecco Superiore is born from the vivacity and desire to experiment of the Le Vigne di Alice winery, that is, produced with Glera grapes from a single harvest. The vines from which they are harvested are grown in sylvoz and rooted in a calcareous clay soil rich in morainic residues dating back to the ancient Piave glacier. In the cellar the grapes are de-stemmed and subjected to soft pressing. Fermentation takes place only with indigenous yeasts in steel, with rest on the fine lees for 90 days. The second fermentation with the Charmat method is activated only by the addition of must, without the use of other sugars.
The Prosecco di Valdobbiadene "Doro Nature" by Le Vigne di Alice is characterized by a fragrant, sharp and dry aromatic profile: the notes of pear, apple and fresh fruit, typical of Prosecco, are combined with more complex hints of spices, aromatic herbs and bread crust. The sip is delicate, fresh, light and fruity but also juicy, crunchy, rich in thickness.
