Pairings
Ideal with delicate white and red meats, rich first courses, feathered game, medium-aged cheeses. Also excellent with cold cuts.
Refinement
Partly in stainless steel and partly in used French oak barrels for about 6-12 months, followed by bottle aging.
Vinification
Cold pre-fermentation maceration, alcoholic fermentation at controlled temperature (25-28°C) with frequent punch-downs. Malolactic fermentation completed.
