DESCRIPTION OF THE DILEO
Castelvecchio's Malvasia "Dileo" is a label that the winery dedicates to its founder. An important tribute therefore, which portends the importance of the bottle in front of us. The choice of over-ripening and drying the grapes leads to a concentration of softness that can be detected from the first sips, wide and full in presenting a long savory tone, which also continues in the finish. An excellent Malvasia, to be tried with tomato "seasoned" fish soups.
"Dileo" is made by the Castelvecchio winery starting from Istrian Malvasia grapes grown in the rows located within the Karst Natural Park, characterized by a calcareous subsoil of red earth, rich in minerals. The vines are daily "pampered" by the Bora, a whipping wind that creeps between the plants, preventing the birth and evolution of molds. A part of the bunches undergoes a slight withering, while the remaining part is overripe. We proceed with a soft pressing, and the fermentation of the must takes place in stainless steel tanks. The aging lasts a few months and takes place in steel on the noble lees.
“Dileo” Malvasia di Castelvecchio presents itself to the eye with a typically straw yellow color, crossed by some more greenish flashes. The olfactory spectrum is outlined around herbaceous and vegetable touches, from which fruity references and subtle more brackish nuances also emerge. On tasting it enters with a light, dynamic and full body, characterized by a fresh and mineral sip, which closes with excellent persistence. A label that takes shape from a particular production process, and which therefore demonstrates all the skill of a winery that loves to express the Karst terroir with countless nuances.
