Manufacturer: Castelvecchio
The Sauvignon di Castelvecchio is a creation born on the Karst plateau and grown by the lashing Bora. It shows itself immediately with the characteristic notes of the asparagus and artichoke varietal, immediately replaced by exotic fruit attributable to pineapple and kiwi, white peach and green apple. On the sip it is particularly pleasant for the balance created between flavor and freshness with a light and persistent spicy finish. Organic wine.

DESCRIPTION OF SAUVIGNON
The Sauvignon from the Castelvecchio Friulian cellar is a fresh and aromatically rich version of this famous French grape, which arrived in Friuli Venezia Giulia in the second half of the nineteenth century. The vines are grown in the Gorizia Karst area, in an area between the Slovenian border and the Adriatic coast. It is a Sauvignon with a typically Mediterranean and marine character, which expresses an intense aromatic outfit, characterized by the presence of notes of ripe fruit, vegetal nuances and soft tropical hints, which make the sip broad, long and persistent.
Sauvignon wine is an interpretation of one of the most famous and loved white grape varieties in the world, for its seductive slightly aromatic profile. The Castelvecchio winery cultivates it in a splendid estate, located near the town of Sagrado, on the Gorizia Karst plateau. The vineyards are gently kissed by the sun, by the mild breezes of the nearby Mediterranean and whipped by the cold winds that blow violently from the north-east. The calcareous soils, particularly loved by Sauvignon also in the Loire Valley region, are perfect for expressing the grape variety with elegance, finesse and richness of aromas. The result is a wine that faithfully respects the varietal characteristics of the grape, enriching them with some marine and Mediterranean nuances, typical of the wonderful Karst terroir.
The white Sauvignon, produced by the Castelvecchio winery, comes from a soft pressing of the best grapes selected directly in the vineyard, followed by fermentation in stainless steel tanks at a controlled temperature. The wine rests for a few months in steel before being bottled. In the glass it shows a bright straw yellow color. The olfactory profile offers fragrant notes of white peach, slight vegetal hints, notes of medicinal herbs, soft aromas of pineapple and the sweetness of tropical fruit. The sip is aromatically intense and rich, with a mature and expressive center of the mouth. The finish is fresh and harmonious, with a finish that returns to pleasantly fruity and spicy notes.

Taste Full, mature, with great structure, fresh, persistent
