Vinification:
Fermented in stainless steel with skin maceration for 15-20 days, barrique aged for one year and bottle aged for several years. On average the wine is suited for aging 30-35 years.
Food pairings:
Excellent with roasted and braised red meats and aged cheeses, it also marries particularly well with the most refined international cuisines. Serve at 16-18 °C (61-64°F) in a large stem glass.
Anecdotes:
A DOCG wine since 1990 with retroactive recognition back to the 1983 vintage, it is a great classic that in the past few years has acquired renewed vigour that elegantly speaks using its traditional language of balance and harmony. Rubesco is a proprietary trademark deriving from the Latin verb rubescere, to blush: hence, a joyous meaning. On the label, a bas-relief depicting the harvest, detail from the Fontana Maggiore of Perugia, Italy’s most beautiful 13th-century fountain.
