Altitude: 700 m above sea level.
Climate: it is a high hill, with significant changes in temperature between day and night.
Land: sandy, volcanic, rich in minerals with a subacid reaction.
Vines: Nerello Mascalese (Negrello), raised in alberello. In the Etna area it is the main autochthonous vine. It has a large, medium, compact bunch. Medium-sized berry, light-blue skin, very pruinose, with a sweet, very tannic flavor. Nerello Cappuccio or Mantellato bred to sapling. The place of origin is ignored. It has medium, short, compact bunches. Medium grape, blue-black skin, sweet taste, slightly tannic.
Plant density: 8,000 plants per hectare.
Yield per hectare: 70 quintals
Age of vineyards: 40 years.
Vinification: the grapes, harvested after the middle of October, are traditionally vinified in red.
Maturation: after malolactic fermentation, the wine is decanted into small 225-liter barrels where it remains for 8-10 months.
