Bouquet
Broad, complex: ripe red fruit (sour cherry, plum), sweet spices, cocoa, tobacco, balsamic hints. Well-evolved.
Taste
Structured, elegant, balanced, persistent. Smooth, silky tannins, well-integrated typical Barbera acidity. Long finish.
Alcohol content
14.5% vol.

Large Burgundy glass or Grand Cru glass.
Pairings
Roasted/braised red meats, game, aged cheeses, truffle dishes.
Refinement
Long aging in French barriques (12-16 months) then in bottle (at least 12 months).
Vinification
Fermentation in steel tanks, skin maceration. Malolactic fermentation. Barrique aging.
