Variety of apples: the apples come from a small area of Normandy called Pays d'Auge. Two types of apples are used: 80% sweet apples and 20% apples with a lot of acidity. All apples are picked manually.
Cider production: the apples are blended, split and pressed. The resulting apple juice is fully fermented, this gives the cider which is then distilled.
Distillation: a double distillation is carried out: the first distillation of the cider gives rise to the "small water". The second distillation of the "little eau" creates Calvados. Double distillation takes place 6 months after fermentation.
Ageing: It was aged for a minimum of 30 years, in lightly toasted 1200 liter oak barrels and then in 400 liter barrels.
Tasting Notes: Golden mahogany color. Powerful with great intensity. Sweet with strong floral and citrus aromas. Notes of honey, spices and caramelized apples are also perceived. Aromas of spices, roasted apples and notes of wood.
