Ingredients for 4 people:
- 250 g taglierini "Pastificio Caponi"
- 1 grilled eggplant
- Grilled, marinated in olive oil, zucchini "Arconatura"
- Cherry tomato sauce "Casa Morana"
- salted ricotta "Sapori del Sud"
- Extra virgin olive oil and olive Moresca "Frantoio Cutrera"
- 1/2 red onion
- salt from Trapani "Oro di Sicilia"
- pepper
Grill the eggplant and cut it with the grilled zucchini into strips. Put the chopped onion and the vegetables with a little olive oil in a pan. Simmer for 5 minutes. Then add the cherry tomato sauce and simmer for another 3 minutes.
Cook the taglierini until al dente, drain and add to the sauce. Season with pepper and serve with grated ricotta.
