Vinification: hand-picked at the beginning of November 2018; this Riesling Beerenauslese was made from a selection of botrytised grapes. That is, the grapes were affected by noble rot, which made the skin of the berries permeable. In this way, part of the berry's liquid evaporates and the sugar and acidity of the berry are concentrated.
Tasting Notes: Clean and delicate on the nose. Spicy, flint and precise, reminiscent of crushed granite rocks. Sweet and juicy but still delicate and also spicy and refined on the palate, this is a perfectly balanced, playful BA with finesse and elegance rather than sheer sweetness and concentration. The finish is even salty and very stimulating.
Pairings: It goes well with dry desserts and pastries, blue cheeses.
