Colour
Pale ruby red, sometimes garnet. Bright and crystal clear.
Bouquet
Intense and complex, with notes of red fruits (cherry, raspberry), violets, sweet spices, tertiary hints of undergrowth and leather. Delicate and persistent.
Taste
Elegant, harmonious and balanced, with fine and silky tannins. Excellent acidity that imparts freshness. Long and persistent finish, with a fruity-spicy return.

Type of glass
Large Burgundy or Rhine glass, to allow good oxygenation and a full expression of the aromas.
Pairings
Ideal with white meats, noble poultry, mushrooms, truffle-based dishes. Excellent with medium-aged cheeses. Also perfect with delicate cured meats.
Refinement
After malolactic fermentation, it ages in French oak barriques for 12-18 months, followed by a further period of rest in the bottle.
Vinification
Manual harvest, destemming, alcoholic fermentation in steel tanks at controlled temperature with maceration. Malolactic fermentation completed.
16°-18°C. It is recommended to open it at least 30 minutes before serving to allow aromatic expression.
