Maceration time: Four hours cold inside the press, whole grain with carbon dioxide protection.
Malolactic fermentation: Incomplete, only 40% of the cut was made in tanks with lactic bacteria sowing.
Clarification: Granulated bentonite was used.
Tasting notes: Greenish yellow color. On the nose, aromas of tropical fruits and citrus are combined with floral notes. Its short oak aging brings an elegant touch of vanilla and white chocolate. On the palate it has a very good entry, it is fruity, fresh, with good acidity and well balanced.
Pairing: Excellent to accompany vegetarian food, oily fish, poultry, pork
