Obviously the mozzarella is better when eaten fresh. But it also can be frozen right after the receipt of the order. When you defrost it, you have to take it out of the freezer and leave it at ambient temperature for 2 hours. Then immerse it for 10 minutes in water at 45/50°C. Like said, it tastes better, if you don't freeze it, but if you need to conserve it, freezing is definitely an option.
