In the ultra-modern laboratory in San Ginesio, within the Monti Sibillini National Park, we carry out artisanal processing and natural curing of cured meats.
It is these production choices that allow us to make the typical cured meats of the Marche tradition in an artisanal way, without the use of colorants.
To achieve a perfect union between genuineness and taste, some products are also preservative-free.
Prominent among the products is the production of Ciauscolo, which has been awarded the European Union's PGI mark since 2009. A typical product of our land, Ciauscolo is a cured meat with a particularly soft texture, ideal to spread on bread or focaccia and to pair with the excellent red wines of the Marche region
