Roasted/braised red meats, game, aged cheeses, rich pasta dishes.
Refinement
Minimum 24 months, with at least 12 months in oak barrels. Followed by bottle aging.
Vinification
Fermentation in stainless steel tanks at controlled temperature. Maceration 15-20 days.
