Romanella Spumante «Roma-Amor» Fontana Candida springs from one of Lazio's great wineries where the most ancient history encounters the most modern fashions and tastes, with the recovery of the great traditions of the Castelli Romani in the marriage of terroir, local vines and qualitative excellence.
Obtained by the Charmat method is a sparkling wine extra-dry, with fine and persistent aromas.
The flavor is soft and fresh, with a pleasant aromatic note. Romanella is the "Roman sparkling wine" to drink with friends for an original aperitif or as the ideal match for appetizers and light dishes.
The grapes: Malvasia del Lazio, Trebbiano giallo.
The vineyard: selected grapes in the Roma Doc production zone.
Vinification: the grapes, harvested as soon as they achieve the optimum acidity/sugar ratio, are vinified separately off their skins with soft pressing, static cold decantation of the must and fermentation at 15-16°C with selected yeasts that exalt the varietal aromas.
The second fermentation takes place in pressure tanks with controlled temperature and pressure.
The wine: a fine and lingering perlage; a light straw colour; a fragrant perfume with engaging fruity and floral recollections; smooth, fresh and lively on the palate with a typical aromatic note.
Analytical data: alcohol 12.00 %; total acidity 5.5 g/l; pH 3.20; sugars 13.00 g/l; extract 19 g/l.
Ideal storage: 2 years in bottles on their side in a cool dark place.
Gastronomic pairings: ideal as an aperitif, with hors d'oeuvres and light starters.
Serving temperature: 6-10°C
