A name which evokes the ancient world of the roman senators for a wine of strong character.
The wine is vinified by the red wine method with a temperature-controlled maceration on the skins. At the end of the fermentation part of the wine is aged in small oak barrels and the remainder rests in steel tanks.
The blend produces a wine with a deep ruby red colour, a fruity bouquet and a dry, soft flavor strongly redolent of cherries.
Grapes: 100% merlot
Vineyard: selected vineyards in the most celebrated zones of the region; the vines are trained by the Guyot system at a density of 4.000 vines per hectare.
Vinification: the ripe grapes are picked during the last ten days of September and vinified by the red wine method with a 10-12 days maceration at a temperature of 22-26°C; part of the wine is matured in small oak barrels and the remainder in stainless steel tanks.
Wine: deep, ruby-red colour; fruity bouquet; dry, soft flavour full of cherries, plums and fruits of the forest.
Analytical details: 13,0% alcohol; 5,0 g/l total acidity, 3,60 pH; 1,5 g/l sugar; 29,0 g/l dry extract.
Optimum keeping: 2-3 years in horizontally stored bottles in cool, dark conditions.
Food matches: pasta with rich sauces, white meat and lamb
Serving temperature: 18°C / room temperature.
