Its name evokes genesis and procreation, interpreting symbolically the birth of the cellar. This wine restores the noblest oenological tradition of the Frascati area, enhanced by the selection of vineyards which have an average age of 50 years and still produce the best of Frascati’s typical grapes: the Candia and Lazio Malvasia varieties are joined by Greco and Bombino.
Vinification is followed by an ageing of 12 months, of which at least 4 in bottles, in the ancient cellars of tuff rock, with naturally constant temperature and humidity.
This is how Luna Mater originates, with its typical and ample bouquet and a full flavor with a pleasantly lingering, elegant, fruity finish.
The name Luna Mater evokes genesis and procreation, interpreting symbolically the birth of the cellar and the inspiration for the experts, grapes and vine varieties which make up the tradition of Frascati. It is, as well, a reminder of the moon, mysterious and enigmatic, forever linked to agricultural practices.
The label is based on the original work created for the fifty years of Fontana Candida by the Roman artist Domenico Bianchi.
The grapes: 50% malvasia di Candia, 30% malvasia del Lazio, 10% Greco, 10% bombino.
The vineyard: selected parcels on the hills of the Doc zone (from 200 to 400 metres altitude) in the communes of Frascati and Monteporzio Catone. The loose, porous, volcanic soil, dry without being arid, is the typical “terrinella” (pozzolana, rich in potassium, phosphorous and microelements), ideal for viticulture. The training systems are the spalliera, the Guyot and the cordone speronato.
The vinification: the vintage was postponed until towards the end of the month of October and the well ripened grapes were selected before harvesting, the bunches were picked by hand, put into small boxes and taken immediately to the cellar; here the grapes were divided into two parts, the first was at once cooled down before being gently pressed to maintain unchanged in the must the aromatic components, the second part was destemmed, cooled and immediately fermented in contact with the skins in small wooden barrels, to produce a marked varietal character and an original olfactory complexity and flavour.
A final small share, vintaged a few days later than the first ones, was destemmed by hand and the grapes were added intact to the fermenting must from the grapes picked first in order to preserve in the wine the typical bouquet and
flavor of the grapes.
Ageing: after the bottling there follows 1 year of refinement, of which at least 4 months in bottles, with the bottles lying horizontally and placed in the cantina’s cellar excavated by hand in the tufa, with a naturally constant temperature and humidity.
The wine: bright yellow gold colour, intense, full bouquet which evokes the grapes of origin and with a fragrance of exotic fruits; dry, full flavour, soft, savoury and enveloping, with a pleasantly lingering, elegant, fruity aftertaste of ripe pears and of green almonds.
Analytical details: 14.80% alcohol; 5.20g/l total acidity; 3.35pH; 2g/l residual sugar; 23 g/l dry extract.
Optimum keeping: 2 years in bottles stored horizontally in cool, dark conditions.
Food matches: first courses of the Roman cuisine, fish, white meats.
Serving temperature: 10-12°C.
