This wine of exceptional elegance and complexity is produced from well ripended Merlot grapes picked by hand.
After the vinification the wine is aged in small oak barrels for about 12 months. There follows an ageing in bottle.
It is a wine of deep, ruby red colour with a bouquet of ripe fruits of the forest and a full, round flavour with a very long finish
The grapes: 100% Merlot
The vineyard: is situated in one of the most acclaimed zones of Lazio, at 300m above sea level with vines facing south-west, a few kilometres from the Tyrrhenian sea. The climate is tempered by winds coming from the west (south). It is notable for a system of planting with 4400 vines per hectare, Guyot trained.
The soil: is mainly of volcanic origin, very permeable and rather rocky in places.
The vinification: the well ripened grapes, picked by hand, were vinified by the red wine method, with 12 days of maceration, at a temperature of 22 - 27° C. After the devatting, the alcoholic and then the malolactic fermentations the new wine was then put into new barriques for 12 months. There followed a period of refinement in bottle for few months.
The wine: has a deep, clear, ruby red colour; the full and complex bouquet evokes ripe fruits of the forest with spicy hints which shade into notes of tobacco; the flavour is full, with soft tannins, enrobed and with a very lingering finish.
Analytical details: 14.90 % alcohol; 5.20g/l total acidity; 3.60pH; 2.0 g/l residual sugar; 30 g/l dry extract.
Optimum keeping: 5 years in bottles stored horizontally in cool, dark conditions.
Food matches: red meats, game, mature cheeses.
Serving temperature: 18°C.
