Harvesting Method: The grapes are manually placed in boxes and then put in “fruttaia” for withering.
Withering: Lasts from 3 to 4 months, is carried out in a specially constructed ventilated structure where the water evaporates and the sugar concentrates.
Vinification: In January-February, crushing the grapes with rubber rollers as softly as possible
Fermentation: Fermentation is then performed in vats at controlled temperature of 25 ° C taking about 30- 35 days. The alcoholic fermentation takes place with the contact between the solids (skins and seeds) and the wort. The anthocyanins, phenolic substances, supported by the formation of alcohol from the solid into solution, it is called maceration. Malolactic fermentation takes place in spring, and is performed by the inoculation of lactic bacteria
Ageing: In 25 hl oak barrels for 48 months where the natural micro-oxygenation takes place, the color stabilizes and the aromatic component evolves. The bottle is then placed horizontally for 9 months allowing the formation of the bouquet to be completed.
TASTING NOTES PIOVESOLE
Color: Intense and black, brings us back to almost impenetrable concentration and important viscosity.
Nose: Rich and vigorous nose, with the surprising amazing fragrance of spices. The intense varietal and vegetal sensations alternate with blackcurrant and blackberry, eucalyptus and surrounded by sweet spices. The notes are alcoholic and alive, in aromatic emerging maturity. Persistence keeps the memory of the smell of fruit and oriental spices, in a succession of strong ethereal sensations.
Taste: The fragrance evolves into the perceptions of dried fruit, nuts and bitter almonds. Richness and concentration are also re-proposed to the palate, where an unexpected freshness lightens the drinkability and maintains the pleasure, a very consistent wine. Strength and fragrance are divided equally in the mouth, immediacy and complexity, body and soul. A young Amarone della Valpolicella but with an already clear and frank character. A serious important wine, by color, aroma and palate, where such an intensity marvel the taste buds, searching for food.
Food pairing: A wine that goes nicely with roasted meat but that absolutely does not disdain to be drunk by itself, in its essence
