The large amount of residual sugar gives sweetness and softness to this dessert wine, and makes it particularly suitable to accompany cakes and pastries, at the end of the meal.
The grapes: trebbiano, malvasia.
The vineyard: selected vineyards, on well exposed terrain of a varying kinds.
The vinification: the pressing of the grapes, left to over-ripen on the vine, is followed by the fermentation at a controlled temperature (15/16°C). Having reached 5/6° alcoholic strength, a distillate of wine is added to stop the fermentation process and to reach 16°, thus preserving a substantial part of the must’s sugar.
The maturation: in stainless steel, and a small part in large casks.
The wine: amber colour; full and fragrant bouquet of dried grapes and vanilla; a markedly sweet flavour, warm and powerful, with a pleasing, pleasantly lingering aftertaste of dried fruits and musk.
Analytical details: 16.40% alcohol; 4.00g/l total acidity; 3.55pH; 120g/l residual sugar; 21.9g/l dry extract.
Optimum keeping: 8 years in bottles stored horizontally in cool, dark conditions.
Food matches: dry pastries (cantuccini di Prato) or “for meditation”.
Serving temperature: 12-14°C.
