Vinification: Floating-cap fermentation, using indigenous yeasts, takes place in stainless steel tanks and lasts 14/15 days, followed by a maceration of 10/15 days. The temperature varies according to the progress of the fermentation.
Ageing: After the completion of the malolactic fermentation (December), the wine is transferred to 300 L French oak barriques (50% new 50% once-used) for 12 months ageing, followed by an additional 12 months in 25 hL wooden casks.
Wine: The Asij expresses a nice intensity and persistence on the nose, with hints of withered flowers. It demonstrates a well-balanced taste and good acidity in the mouth. This Barbaresco is excellent after 4 to 10 years, regardless of vintage, and up to 15/20 years in outstanding vintages.
Note: Barbaresco Asij, like the Barolo Zonchera, has an importal role in preserving and guaranteeing the excellence of the single-vineyard, Bricco Rocche Barolo and Bricco Asili Barbaresco wines. In lesser vintages (statistically 2 out of 10), wines produced at the two wineries in Castiglione Falleto and Barbaresco and deemed unsuitable to carry the indication of the cru are blended with these two base wines.
