Winemaking: The best grapes are carefully picked by hand and placed in small crates in which they are taken to the winery. Following a subsequent process of selection, the grapes are dried naturally using the traditional method, on cane mats for at least 3 months. Once the grapes have withered, they are crushed. The sweet, dense juice extracted is kept in small, 100 liters oak barrels for 5 years in the old family cellar. Unfiltered.
Color: intense amber
Nose: Intense and ethereal aromas of nuts and caramel
Palate: velvety and harmonious taste, the sweetness is balanced from acidity, long-lasting finish with almond overtones, raisin and toffee notes.
Good with desserts(not markedly sweet) and pastry-dry .
Can be served as an aperitif or in combination with starters: in fact, served chilled, it is ideal to accompany the marbled cheeses and is also a good pairing for all finest pate.
The classic pairing for Vin Santo is biscotti, the dry, hard almond cookies of Tuscany, named “Cantuccini”. But a really good Vin Santo, should be served on its own. It’s the wine of hospitality and friendship . A good wine to sip slowly at every time, and think about the good things your life has to offer.
