Manual grape harvest between the first and second day of October.
Part of the grapes ferment in large oak vats and part in steel. Without adding chemical additives to the grapes, only long macerations with the skins, from a minimum of 20 days to 60 days; then gentle pressing with the traditional hydraulic press. Followed by 24 months of aging in 30 hl oak and steel barrels, at least ten months in the bottle.
Tasting notes: Ruby red color with garnet reflections. The nose is wrapped in austere, fruity tones and more Mediterranean tones of thyme and blackberry. Elegant with dense and homogeneous tannins.
Pairings: Ideal to accompany ragù dishes, second meat courses, sausages, pizza
