Grape varieties: Cabernet Sauvignon and Cabernet Franc (vinified as a field blend).
Description: deep, fairly intense garnet colour with a ruby shimmer. Quite pronounced aroma, masculine style; leafy, meaty and very spicy character, with impressions of black pepper, tar and leather, good complexity. Young, fresh and well-structured flavour, with tannic grip and good depth of fruit, long and spicy on the palate. When stored properly, this wine will drink well for at least 4 – 6 years.
Suggested foods: red meat such as beef and lamb, venison, game, all types of cheeses.
Origin: selected vineyard in Magrè and Cortaccia at 240 to 350 metres a.s.l. (790 – 1,150 feet). Soils are gravelly with a high content of limestone. Warm mesoclimate with big variations of temperatures between day and night.
Age of vines: 10 – 50 years.
Vinification: soft crushing an pressing of the grapes, fermentation for 15 days and malolactic fermentation in stainless steel tanks. Maturation for 18 months in barriques.
Alcohol: 13.0 % by vol.
Acidity: 4.3 g / litre.
