The Pastificio Caponi is a Tuscan pasta factory, headed by two brothers, Andrea and Alessandro Tagliagambe.

The company produces high-quality dried egg pasta made with carefully selected ingredients.

For the production we use only high-quality Canadian durum wheat semolina (Canadian type). Due to its high protein content this is one of the best types of wheat. The fresh eggs come only from selected farms. They are controlled and opened by a worker by hand.

Drying is the most important stage in the manufacturing process. The Pastificio Caponi here differs significantly from other manufacturers, because the pasta is dried very slowly and carefully at room temperature for about 70-80 hours.

Therefore, the pasta keeps its taste and tastes just like fresh pasta.

Cooking time: 2 minutes

Serving suggestion: As noodles in a soup or as a pasta dish with a little butter or extra virgin olive oil.

Pastificio CAPONI: artisanal producer of fresh or dry egg pasta
The meticulous research of the best quality raw materials has always been the base of our policy, together with the constancy on maintaining a production cycle as much similar as possible to the traditional one which was used by the italian housewives. The first passage consist in mixing fresh eggs and durum wheat flour , at ambient temperature, in a specific machine called pasta maker. The pasta during its lavoration cycle doesn't suffer any thermal variation, this let us not to alter the organoleptic qualities of the raw materials.
