Not everybody knows the Patata Novella di Siracusa, an Italian potato variety that is going to join the PDO (protected denomination origin) register. It is the main cultivation among the Sicilian potatoes, with the 50% of all the cultivated tubers in the region, moreover it is the earliest potato harvested in the entire Europe. This happens due to climatic and geological conditions of Sicily, which is endowed with warmer clime than the ones normally potatoes is exposed to, with a considerably lower hydration. The ensemble of these uniqueness factors leads to the differentiation of the product, that presents a thin but resistant skin and a yellow and few chalky paste. It is very versatile for cooking, perfect for mashed potatoes and gnocchi, but at the same time fit for baking and fries. We at OIP offer, depending on the season, the different types of Italian potatoes available on the market according to the ideal seasonality.

The peculiarity of Fiasconaro is bringing a concept normally associated to the wine world, that is to say the bond with the territory, in the baked products and pastry-making. The use of typical ingredients coming from the surrounding area of Sicily as Pistachio nuts, Oranges, Almonds and Modica Chocolate, makes the panettoni and colombe di pasqua Fiasconaro a true expression of their own land in a pastry-making key. The high quality of the ingredients together with the slow natural leavening process up to three days from starter, make the Fiasconaro Products an absolute high quality reference point in the craft pastry-making.

Soon an important new entry will join the OIP catalogue, Cantina della Volta is a company which focuses on quality and innovation, whose excellence has already been certified by recognitions by the some of the greatest expert of the field and guides as Luca Gardini, Slow Wine, L’Espresso and Gambero Rosso. The winery takes its name from the river bank of the Naviglio di Bomporto, in Modena, where already during the Renaissance the commercial ships used to do the typical turning ( Turning= Volta) coming back to Modena city center. The company philosophy is transmitting the value of the territory through the Champenoise method, developing in two main directions: - An high quality Lambrusco di Sorbara DOC sparkling wines line, one of the few made up with the refermentation in bottle of the Champenoise method instead of the one in autoclave of the Charmat method. - The others are a reinterpretation from an Emilia perspective of the great Champagne, through the use of the classic wine varieties Chardonnay and Pinot Noir cultivated on a hill 650 m over the sea level, in a terroir whose composition limestone-clay-gypsum (on the surface) reminds of the one of the Northern France region. A reality that focuses on the production of wines respecting absolute qualitative and standards and criteria, without any compromise towards the tastes of the mass market, proposing an high level, original offer supported by a well defined idea.

The color is lively red, the stalk small and soft, its coloration is due to a characteristic process, that is to say the redding on the ground in the so called “melai”, pieces of land covered by soft material (pine needle mostly) organized in order to protect them from the excessive solar irradiation. The production and safeguard area includes 137 Campania cities, where the consortium controls and certifies the authenticity and the the processes established by the IGP disciplinary. On the historical side it was well known since the Romans, indeed it was inserted it in many painting and praised by Plinio il Vecchio in his manuscripts. This kind of apple is not only rich in vitamins, minerals and fibers, regulating the intestine activity, but also in phenol compounds, which, in a research made by the university Federico II of Naples, in the Melannurca have shown to be powerful antioxidants able to halve the oxidative damages in the epithelial gastric cells and act against free radicals.

More and more people are coming back to dedicate themselves to the home made production of bread, focaccia and pizza. We of OIP want to help you to reach the best possible result, both on the taste and in the genuineness of the final product. The flours that can be find on the supermarket shelves aren’t always good quality raw materials, so they alter the tastes and the organoleptic qualities of bakery products in a negative way. Within our catalogue you will be able to find different kind of flours, from the most common varieties to the ones derived from ancient wheats. All of them rigorously Made in Italy all over the production processes: from the wheat cultivation without dangerous chemical fertilizers, to the stone milling. Why using Italian flour? The flour leader countries producers (Canada, Rumania), due to the lack of sun and warm needed for the most part of the year, are obliged to dry the wheat using the glyphosate, an herbicide that avoid the wheat to go bad within few days, but it surely hasn’t a good effect on health, so that it is under observation as a possible cancerous substance. In Italy, on the contrary, particularly in the Southern regions, is endowed with a warmer and sunny weather, so the producers are able to dry wheat naturally under the sunbeams. To give your dough an unique aroma try the flours by Fastuchera Agricultural Company, a small company that invest in the production of flours deriving from Sicilian ancient wheats, towards a eco sustainable agriculture protecting the biodiversity and the genuineness of the final product. Hi OIP.
It would be very practical to know how long your cheeses will last in my refrigerator ? Estimated from right after production.
Thank you.

I ordered 6 bottles of Bonarda red wine from OIP, as they are the only supplier I have found able to supply on a regular basis. Bonarda is a fabulous, slightly frizzante red wine and I have not been able to find a supplier in the UK. Ordering from OIP was very simple, and the delivery was well packed and arrived very quickly. I will be placing more orders with OIP for this product in the future.

I bought this Mullet bottarga from OIP and tried some of your many recipes. At first I thought that a small piece of bottarga wouldn't last long. But the I was surprised of how much taste it has! It's delicious and yields a lot.

I already ordered from OIP pickeled artichokes and olives. Now I wanted to order again. But what are hyacinth bulbs?

I bought this sparkling wine Barone Pizzini Satèn from OIP and I wanted to serve it with a dessert. But now I read your description of the wine and it's indicated as suitable to accompany the meal. Is this correct?
