The Felino Salami IGP
The Felino Salami is originally from the small town of Felino. The salami is made exclusively from pork from the shoulder piece. 70% lean muscle meat and 30% fat of selected meat pieces.
The meat is chopped into medium chunks. To the mixture are added salt and whole peppercorns. After that, the sausage mixture is filled into the natural casing.
The casing is particularly thick, so that the salami stays soft for a long time. The Felino Salami is allowed to mature for at least 60 days.
The salami slices have a dark red color with white pieces of fat. The aroma is intense, while the flavor is delicate and mild. The salami is cut at an angle to get oval slices.
The Ministry has recognized the Felino Salami as a typical regional product.
